I have signed up for a program (called Sustainable Selections) that allows me to take expired meat from a national retail grocery chain on a weekly basis. I pay a monthly fee and basically act as their removal service (in place of the renderers that used to take it). It is packaged but all mixed together, so you will have to be prepared to dig through the barrels to get what you want.
